Philly-style cheesesteak
Philly-Style Cheesesteaks

While delicious and beloved, the classic sandwich is somewhat of a greasy hot mess. With just a few tweaks, including a leaner cut of meat than usual and polyphenol-rich olive oil, it becomes a satisfying meal with a better health profile. If you prefer, swap mozzarella for the provolone.

Skillet Shrimp and leeks
Skillet Shrimp with Leeks and Beans

This dish uses two of the more delicate members of the allium family—leeks and chives—to add oniony taste without overpowering the shrimp. If you want more zest, be generous with the red pepper flakes.

Pistachio thumbprint cookies
Mini Pistachio Thumbprint Cookies

With a minimal amount of sugar, these cookies pack all the heart-healthy benefits of nuts, a key food—along with extra virgin olive oil—of the Mediterranean diet. Though sweets are the smallest food group on the Mediterranean diet food pyramid, we know that an occasional treat can help us stay on track with this healthful way of eating. This recipe shows that you don’t have to make huge sacrifices to enjoy it.

asparagus tart
Spring Asparagus Tart

This gorgeous dish comes together with only a few ingredients and very little active prep. It’s the perfect example of using olive oil as Mother Nature’s “sauce”—a drizzle right before serving turns EVOO into the star of this dish. Read the fine print on frozen puff pastry labels—many brands are loaded with artificial ingredients and no butter! I like the Bronx, New York-based Dufour Pastry Kitchen brand—the company is run by women and the results are delicious (they also make a vegan version). Any dough trimmings can be twisted into spirals, brushed with egg, sprinkled with grated cheese, and baked on a separate sheet of parchment for about 20 minutes.

Pan-sauteed cod
Pan-Sauteéd Cod

This simple prep creates a delicious sauce for the fish, and it cooks in a single pan. If you can’t find wild-caught cod, you can substitute another white-fleshed fish, fresh or frozen, preferably sustainably caught. There are now wonderful online fishmongers that ship expertly frozen fish to your door.

Chilaquiles with fried egg
Chilaquiles with Fried Eggs

This Mexican dish, which dates back to the early Aztecs, is as delicious as it is easy to make. My fast-and-furious version uses prepared salsa and packaged tortilla chips for the quickest prep, but if you have a few extra minutes, it’s even more amazing when you make your own chips (see Quick Kitchen Nugget) and salsa—click to check out my salsa recipes. I love chilaquiles with fried eggs, but you can personalize your dish with another protein or beans.

Rich chocolate rolled cookies
Rich Chocolate Rolled Cookies

Looking to satisfy a sweet tooth? This recipe for chocolate cookies uses olive oil in place of some of the traditional butter, resulting in a cookie that practically melts in your mouth. If you’re a true chocoholic, press a few chocolate chips into the dough or dip one end of each cookie in melted dark chocolate for an added treat.

Mediterranean-Spiced Sheet Pan Chicken
A Mediterranean-Spiced Sheet Pan Dinner

A highly spiced mixture gives deep flavor to this dish, which comes together very easily (toasting the seeds before grinding intensifies their flavor). The yogurt sauce delivers the perfect tangy balance.

Roasted Salmon with Red Pepper Coulis
Salmon with Red Pepper Coulis

A purée of red peppers and onions makes a sweet accompaniment that won’t overpower the taste of the salmon. Coulis leftovers make a great sandwich spread and dip for crusty bread.

Spiked Apples
"Spiked" Apples

Calvados, the apple brandy from France’s Normandy region, adds great depth of flavor to apple dishes. Since most of the alcohol burns off, my spiked apples make a great addition to your morning oats or yogurt as well as a delicious filling for a tart or crêpes or the topping for a scoop of ice cream—vanilla and olive oil ice cream, of course! They’re equally delicious served alongside pork chops or a pork roast.

Baked Pears with Olive Oil Custard Sauce
Baked Pears with Olive Oil Custard Sauce

Separately, roasted pears and rich vanilla custard are delicious. Together, they’re simply sublime. This dish can be served warm, with the pears just out of the oven and the custard right off the stovetop, or both can be chilled and served cold—the sauce will get thicker in the fridge.
