My Merry Band of Tasters and I are always on the lookout for great side dishes, and these fritters got our attention. Crisp on the outside and creamy on the inside, they complement pork, chicken, sausage, seafood, and more. They also make a great meal on their own.
Ingredients
- 2 large sweet potatoes, peeled and grated
- 3 large eggs, whisked
- 1/2 cup all-purpose or whole wheat flour
- 1/2 cup shredded Cheddar or Jack cheese
- 2 scallions, white and green parts thinly sliced; 1 tablespoon set aside for garnish
- 1 teaspoon coarse sea salt
- 1 teaspoon freshly ground black pepper Extra virgin olive oil
- Crème fraîche or best-quality sour cream, for serving
Directions
Step 1
In a mixing bowl, combine the potatoes, eggs, flour, cheese, scallions, salt, and pepper. (Use your hands to mix thoroughly.)
Step 2
Heat a large frying pan over medium-high heat. When hot, drizzle about 2 tablespoons olive oil into the pan. Use your hands or an ice cream scoop to make as many 3-inch fritters as will fit in the pan. Cook for 4 minutes, then flip and cook for another 4 minutes until they are golden. Repeat as needed, adding another drizzle of olive oil to the pan with each batch.
Step 3
Arrange the fritters on a platter and sprinkle with the reserved scallions. Serve with the crème fraîche or sour cream.
